Before we get into this week’s topic, I want to inform you all about ‘The Chefs Unite Campaign for Ukraine’ taking place in Dublin next week. On the evening of Tuesday 8 March, Allta Winter House, led by Niall Davidson and Hugh Higgins, will bring together some of the Irish hospitality community for a one-off collaboration dinner in aid of the horrific events happening in Ukraine. I think I can speak for everyone here and say that we all feel deeply connected to this week's news, but the staff at Allta have particularly personal ties to Ukraine and are doing incredible work to give aid to a nation in such unforeseen distress. While I am deeply disappointed to be overseas for this dinner, I and many others in our industry will be donating what we can to the auction, which started on Thursday and will end on Tuesday night. There will be 25 prizes available on the night, with dinners, masterclasses and outings of all kinds up for grabs!

Now, I’d like to tell you about a new flavour I came upon and how I went about it.
