Friends,
As you may have seen on social media yesterday, on August 28th and 29th, we will be taking over Note in Dublin.
Tickets for the event will include a tasting menu created around this wonderful season. There will be an additional wine pairing also available on the night (more on that below).
While tickets go on sale to the public at 12pm this Saturday, we have 10 tickets reserved to paid subscribers to the Ómós Digest. It’s on a first come first serve basis, so please send us a message via omos@omos.co, and the first to get their emails in, are, well…in!
A Little Note:
Firstly, I think it’s worth recognising how incredible the addition of Note Bistro, Bureau and Wine bar has been to Dublin upon its opening late last year (You can read All the Food’s Lisa Cope’s take here). From a personal perspective, I’ve witnessed a group of friends come together and apply their diverse skills to produce a first-of-its-kind-space in Ireland. Collectively, my pals, Acky Fakhry — a designer — his brother, Essa — a chef — and Andy Collins — owner of Indigo and Cloth in Temple Bar— have pretty much masterminded the art of the restaurant opening, capturing the attention of eaters and drinkers, in Ireland and further afield. Watching both their progress and journey to success has been a real learning lesson for myself, and I look forward further pestering them about their meticulous strategy for seasons to come!
I am really excited about about this collaboration for a number of reasons. It will be the first time I’ll have cooked for the general public in…ages! It’s no secret that over the past couple of years I have been able to keep my bank balance in check through catering for high-end private dinners, and while they have allowed me to stay creative, there really is nothing like being in a restaurant, serving a myriad of guests who have come especially for the occasion.
We have spent the last week working on a menu alongside the team at Note, and it has been such a pleasure to share a kitchen with head chef Essa Fakhry. Collaborations give one the opportunity to step out of your comfort zone and learn from one another. I love the openness and the collective ethos that flows throughout the entire project, experimenting, and investigating new ideas and inspirations that might not come about otherwise. It’s not been a bad excuse either, to slosh down a few glasses in the process, as to find you the perfect pairing. Brian (from the appropriately named Brian’s wines) who has helped us curate the pairing alongside Note’s very own Katie Seward, will be with us on the evening.
Lastly, the produce. It’s always about the produce for me, and late August in Ireland is what June is to France. Tomatoes, beans, sunflowers, fresh sweetcorn, wild flowers, herbs, seeds galore, and lots and lots of berries.
And so, I really cannot wait to share the floor with you. Hopefully get the time to share the stories surrounding the dishes, and perhaps as the lights dip and music is notched up, share a glass with you.
Hope to see you there,
Le meas,
Cúán.
I wish you all the very best of food and joy in this venture. I will be in Scotland at that time. With you in spirit and will raise a glass to your success. Slante
