This week, we are delighted to welcome the writing of Claudia Dalby, an Irish journalist who has previously written for The Irish Times, Business Post, and the Dublin Inquirer. In this article, Claudia gives her impression of The Quickening exhibition by the wonderful Deirdre O’Mahony in the Douglas Hyde, Dublin. The exhibition responds to issues around farming, food production and consumption, in the face of present ecological and climate crises. My first encounter with Deirdre was during my time working at Bastible restaurant. I recall serving her a dish of new potatoes, with meadowsweet, lovage and buttermilk. I’ll never forget her reaction when I presented it. She announced that Antoine-Augustin Parmentier, perhaps the world’s first potato ambassador, and one of Deirdre’s greatest inspirations, would have been proud of it and that more emphasis needs to be placed on the true magnificence of the Irish SPUD.
