Ómós Digest #217: Meet Matt
An introduction to our head chef, Matt Smith.
At the helm of every kitchen is the head chef, offering up a confidence earned only through years of experience and exposure. Their role isn’t to dominate but rather to channel the ethos that guides everything we do. Our search for a head chef to lead the Ómós kitchen set us on a considered journey to find the ideal candidate - one who shares our values, ambition and aspirations. It’s safe to say we couldn’t be happier with the individual we found. As we enter what feels like the final stage before opening, regardless of how much work we still have ahead, we’re delighted to share more about our head chef, Matt Smith.
Matt’s journey to Abbeyleix, like all of ours to a certain degree, has been one of learning, graft and questioning. This project has been shaped by a multitude of places and experiences - be it both Cúán’s and Matt’s time in Copenhagen, travels through Japan and Mexico, to name but a few, or the coastal Celtic landscapes of Scotland and Ireland. Ómós is the sum of these collective journeys. It will soon also be the sum of all the journeys of the staff who we are beginning to work with, as we hope to forge a unique journey of our own. But enough about that and more about Matt. How does a Scotsman find himself cooking in The O’Moore County and more specifically, Abbeyleix?
