I want to share with you that next Saturday (3rd April 2021) there will be a limited release of something quite exciting. It is the product of 5 months’ work and the coming together of minds between myself, my good friends and tea specialists Clement & Pekoe, and one or two wine buffs. It’s a wee ‘tipple’ and it’s called the Vintner’s Companion.
The Vintner’s Companion is a low-ABV natural wine alternative. An alcohol-free beverage to savour. Our aim was to develop a fermented drink that looks and feels like a wine but without the Wednesday morning guilt. And so here it is: a sophisticated and fresh beverage with the mouthfeel of a well-made wine, minus the hangover. The flavour is smooth with smoky undertones, bruised apple, and toasted butter. Deliciously aromatic and nutty, it’s made with organic produce and brewed in Dublin.
If you haven’t experienced a ‘juice’ pairing at a restaurant, it’s a really interesting alternative to a wine pairing. Designed by sommeliers and chefs within the restaurant, these blends are designed to behave like wines - but are more suitable and balanced for a tasting menu than a Cidona or the juices in your fridge. They work to complement the food and excite your palate. At a ‘fancy’ restaurant that offers a juice pairing, you can also go half-half, allowing the sommelier to create a personalised drink pairing with both wines and juices. It’s a particularly good option if you do happen to find yourself dining on a school night. It makes it that little bit easier to justify any complimentary pours of sake or the temptation of an after-dinner digestif.
We have been testing our product over the last couple of months, bridging together a number of techniques used in the food industry and the beverage world. What is so wonderful about collaborations is the exchange of knowledge between two parties, and working with Clement & Pekoe has brought about just that. Their tea and brewing expertise has opened up another world for me. I have a new appreciation for tea that before, I had never been able to fully grasp. Their tea shop (they serve coffee too), North of the river, is one of my favourite spots to drop into in Dublin. Equipped with a fermentation facility, it is here that their kombuchas are brewed and their vast array of quality teas are stored. Before we became friends, I would often find myself gawking at what was going on behind the transparent doors. It makes this limited release even more special for me.

We’re giving you the chance to pre-order a bottle of Vintner’s Companion for pick-up on Saturday 3rd April at Clement & Pekoe Stores on Blessington St. Paid subscribers get early access to pre-orders via the details below. We’ll also have freshly baked Hot Cross Buns glazed in Lapsang and Meadowsweet Kombucha on the day. While we have nothing against raisins, for this bun, we’ve replaced them with dried figs soaked in a little Vintner’s Companion. A perfect pairing with a C&P tea or coffee and a stroll around the nearby Basin Bath park.
